What better way to wind down than to set to baking a cake… I loooove baking, especially in my downtime and when I’m with my family. This time I created this delicious glutenfree strawberry tart, which is also vegan friendly & heavenly light.
What you’ll need:
- 1/2 lb butter (vegan friendly option: margarine or coconut oil)
- 3 cups gluten free baking mix
- 1 cup powder sugar
- 1 egg (vegan friendly option: replace egg through egg substitute)
- gluten free vanilla pudding
- 16 oz almond milk
- 1 lb strawberries
- 2 tbsp sliced almonds
- 1 tbsp vanilla sugar
- pinch of salt
Preheat oven to 400◦F. Start by mixing butter, gluten free baking mix, egg, powder sugar and salt – stir well. Place dough in fridge and let it cool down for 2 hours. Afterwards, roll out dough into a round 11 inches tart-pan. Line tart pan with the rolled out dough, pressing all away around the pan. Bake the crust for 10 minutes, until golden brown. Remove from the oven and let cool.
Prepare vanilla pudding with the almond milk according to instructions. Let it stay until cool. Spread the filling evenly into the pre-baked tart crust. Place the sliced strawberries onto the filling and add roasted sliced almonds. Refrigerate until cold.
